I enjoy making my own meals, snacks and treats from scratch so that I know exactly what ingredients are being used and I ensure that it meets my own nutritional needs. Of course, this is when time permits 🙂
Not Your Regular Vanilla Cheesecake
I wanted to share this amazing recipe that is not only delicious, but it caters to the needs of many. The ingredients are all gluten free, dairy free, plant based and refined sugar free. This is such as great alternative to regular cheesecakes, and contains so many amazing nutrients that it could almost pass for breakfast 🙂

Healthy Vanilla Cheesecake
1 cup raw almonds
1 cup shredded coconut 10 Medjool dates
1/2 tbsp coconut oil, liquified
4 cups cashews, soaked, drained & rinsed 1 cup water
1/3 cup maple syrup
2/3 cup coconut oil, liquified
2 tsp pure vanilla
1. Line a slice tray with baking paper. 2. Place all crust ingredients into a food processor and process.
3. Pour the crust mixture into the tray and flatten using a square of baking paper.
4. To make the cheesecake filling, add all ingredients into a blender. Blend until well combine and creamy.
5. Pour the cheesecake onto the crust and gently tap to flatten.
6. Refrigerate to set
This recipe is also great to make in bulk and freeze!
